For most applications the best quality is Atlantic, which has the highest fat content and a good colour. However many Chefs and Restaurateurs are opting for the Salmon Trout which has a good overall quality but the brightest colour of the lot!

Our Salmon Trout is a sea trout imported from Norway which we feel is richer in taste and has a better texture! Of the above species, only the Canadian/Alaskan is wild caught, the others are sustainably farmed.  The farms we use place absolute priority on quality, feed safety and sustainability. They limit antibiotic use completely, with antibiotics only administered by a trained vet and in specific circumstances. Less then 2% of our farmed salmon and trout have ever had antibiotics administered. Our farms rely on
industry leading practices to avoid any such situations.
